Epicure’s Crispy Fish

This recipe is also delicious with chicken or firm tofu. Make extra fish for tomorrow night’s dinner.

INGREDIENTS
Makes 4 servings

Prep Time: 5 minutes
Cook Time: 12-15 minutes

1 egg or 2 egg whites

2 Tbsp (30 ml) water

1/4 cup (60 ml) whole-grain breadcrumbs

3 Tbsp (45 ml) cornmeal

1 Tbsp (15 ml) Epicure’s 3 Onion Dip Mix

2 tsp (10 ml) vegetable oil

1 lb (450 g) white fish fillets

1 recipe prepared Epicure’s Salsa – any kind

  1. Preheat oven to 425° F (220° C).
  2. Whisk egg or egg whites with water in a small mixing bowl. Combine breadcrumbs, cornmeal and Epicure’s 3 Onion Dip Mix in another bowl.
  3. Heat oil over medium-high heat in an Epicure’s Eclipse® Coated Professional Frying Pan. Dip fish in egg mixture, coat with breadcrumb mixture and then sear in pan for 2 minutes per side. At this point, you can put any extra fish aside for tomorrow night’s dinner.
  4. Place fish on Epicure’s Parchment-lined baking sheet and bake for approximately 8 minutes, until it flakes easily with a fork. Top with Epicure’s Salsa and serve immediately.
