Epicure’s Amazing Beef Stew

This is the easiest beef stew you'll ever make – save time and make ahead in a slow cooker.

INGREDIENTS
Makes 6 servings

Prep Time: 10 minutes
Cook Time: 3 hours


2 lbs (1 kg) stewing beef

2 onions, cut into eighths

3 ribs celery, coarsely chopped

4 carrots, coarsely chopped

2 cups (500 ml) prepared Epicure’s Beef Bouillon

1/4 cup (60 ml) quick-cooking tapioca

2 tsp (10 ml) sugar

  1. Preheat oven to 300° F (150° C).
  2. Place beef in bottom of a large ovenproof casserole dish. Top with vegetables in the order listed above.
  3. Pour in Epicure’s Beef Bouillon and sprinkle with remaining ingredients.
  4. Cover tightly with foil and cook for 3 hours. Serve.
