Epicure’s Crispy Fajita Chicken

Make extra chicken tonight for Friday night’s dinner.

INGREDIENTS
Makes 4 servings

Prep Time: 5 minutes
Cook Time: 15 minutes

1 egg or 2 egg whites

2 Tbsp (30 ml) water

1/2 cup (125 ml) whole-grain breadcrumbs

3 Tbsp (45 ml) cornmeal

1 Tbsp (15 ml) Epicure’s Fajita Seasoning

2 tsp (10 ml) vegetable oil

4 boneless chicken breasts, pounded until flat

  1. Whisk egg or egg whites with water in a small mixing bowl. Combine breadcrumbs, cornmeal and Epicure’s Fajita Seasoning in another bowl.
  2. Heat oil over medium-high heat in an Epicure Eclipse® Coated Professional Frying Pan or Epicure Eclipse® Coated Grill Pan.
  3. Dip chicken in egg, coat with breadcrumb mixture, then sear in pan for 5-7 minutes per side. Serve.
