Epicure’s Zucchini Cheese Pizza

INGREDIENTS
Makes 4 servings

Prep Time: 10 minutes
Cook Time: 40 minutes

2 cups (500 ml) grated zucchini

3 egg whites

1/4 cup (60 ml) whole-wheat flour

1 tsp (5 ml) olive oil

1 cup (250 ml) shredded partly skimmed mozzarella cheese, divided

1/2 cup (250 ml) Parmesan cheese

1/2 cup (125 ml) Italian sausage, cooked and crumbled

2 tsp (10 ml) Epicure’s Pizza Seasoning

  1. Preheat oven to 400° F (205° C). Spray a 10” (25 cm) pie pan with non-stick spray.
  2. In a large mixing bowl, stir together zucchini, egg whites, flour, oil, ½ cup (125 ml) mozzarella and Parmesan. Press into prepared pie plate and bake for approximately 35–40 minutes, until lightly browned.
  3. Remove from oven. Sprinkle remaining mozzarella on top. Spread sausage evenly over cheese. Sprinkle Epicure’s Pizza Seasoning on the top. Bake for 8–10 minutes, until cheese is browned and bubbly. Serve.
