Epicure’s New York Deli Tuna Melt

INGREDIENTS
Makes 4 servings

Prep Time: 7 minutes
Cook Time: 7–10 minutes

2 — 125 g (250 ml) cans light tuna

1 1/2 tbsp (22.5 ml) light mayonnaise

1 Tbsp (15 ml) Epicure’s Dill

2 stalks celery, chopped

2 whole-wheat Kaiser buns, cut in half, or 4 slices whole-wheat bread

4 slices each red onion and tomato

2 large dill pickles, sliced into 8 strips

1/3 cup (80 ml) partly skimmed mozzarella cheese

  1. Preheat oven to 400° F (205° C).
  2. In a medium mixing bowl, combine tuna, mayonnaise, Epicure’s Dill and celery.
  3. Place Kaiser bun halves or bread slices on Epicure’s Parchment-lined Baking Sheet. Top with prepared tuna mixture. Place tomato on top and then top with red onion. Criss-cross the pickle slices overtop and cover with mozzarella. Cook for approximately 7 minutes and serve.
