Epicure’s Creamy Soup with Grilled Chicken

INGREDIENTS
Makes 4 servings

Prep Time: 5 minutes
Cook Time: 25 minutes

1 onion, finely sliced

4 medium zucchinis, grated, or your choice of vegetable

2 cups (500 ml) prepared Epicure’s Chicken Boullion

2 tsp (10 ml) Epicure’s Chili Seasoning

1/2 cup (125 ml) light cream cheese

3 boneless, skinless chicken breast, grilled and sliced

  1. In Epicure’s Multi-Purpose Pot, add onion and zucchini and cover with water. Add Epicure’s Chicken Boullion and Epicure’s Chili Seasoning. Cover and cook over medium heat for approximately 15 minutes.
  2. Add cream cheese and purée soup until smooth. Pour soup into bowls and top with chicken. Serve.

Serving Suggestion Great with a whole-wheat crusty baguette.

Prep Tip Chop up zucchini and onion a day ahead and store in sealable freezer bags so you are ready to go!
