Epicure’s Easy Italian Florentine Pasta

INGREDIENTS
Makes 4–5 servings

Prep Time: 5 minutes
Cook Time: 25 minutes

2 Tbsp (30 ml) olive oil

1 carrot, grated

1 onion, chopped

1 clove fresh garlic, minced

3/4 lb (337 g) lean ground beef

1 — 14 oz (398 ml) can low-sodium whole tomatoes, liquid reserved

1/2 cup (125 ml) milk

1 Epicure’s Bay Leaf

2 Tbsp (30 ml) Epicure’s Bolognese Sauce Mix

1 cup (250 ml) thawed frozen spinach

1 lb (450 g) spaghetti

Optional – grated Parmesan cheese, to taste

  1. In Epicure’s Multi-Purpose Pot over medium heat, add oil and stir in the carrot, onion and garlic. Add beef and cook, approximately 5 minutes, until cooked through.
  2. Add tomatoes with liquid, milk, Epicure’s Bay Leaf, Epicure’s Bolognese Sauce Mix and spinach. Simmer for 15–20 minutes.
  3. Cook spaghetti according to package directions in Epicure’s Pasta Pot; reserve 1/2 cup (125 ml) water. Drain pasta and then put back into the pot. Add meat mixture and reserved water and let simmer for 1–2 minutes. Top with Parmesan and serve.
