2 cups (500 ml) water
1 Tbsp (15 ml) extra-virgin olive oil
2 Tbsp (30 ml) lime or lemon juice
1/2 cucumber, diced
1/2 cup (125 ml) diced red pepper
1 Tbsp (15 ml) VE Greek Seasoning
Fresh mint, to taste
