Refreshing Quinoa Salad

Quinoa (KEEN-wa) is an excellent source of fibre, phosphorus, magnesium and iron. It’s a complete protein AND naturally gluten-free!

INGREDIENTS
Makes 4 servings

1 cup (250 ml) quinoa, rinsed and drained

2 cups (500 ml) water

1 Tbsp (15 ml) extra-virgin olive oil

2 Tbsp (30 ml) lime or lemon juice

1/2  cucumber, diced

1/2  cup (125 ml) diced red pepper

1 Tbsp (15 ml) VE Greek Seasoning

Fresh mint, to taste

VE Pepper, to taste
  1. Combine quinoa and water in a small VE Multi-Purpose Pot. Bring to a boil over medium-high heat.
  2. Reduce heat to medium-low and simmer for 15 minutes, or until water is absorbed. Remove and let stand for 5 minutes.
  3. Add remaining ingredients and mix well.
  4. Serve immediately or chill for 30 minutes and serve cold, as a salad.

Creative Cooking Instead of VE Greek Seasoning, try VE Tapenade Herbs or VE Greek Dressing Mix.

Serving Suggestion Serve with grilled tilapia or other white fish and steamed broccoli.
