Jamaican Jerk Chicken Pizza with Fruit Salsa

INGREDIENTS
Makes 8 servings

2 — 6 oz (168 g) pre-cooked boneless, skinless chicken breasts, cut into thin strips

1 Tbsp (15 ml) VE Jamaican Jerk Seasoning

1 Tbsp (15 ml) olive oil

1 cup (250 ml) sliced mushrooms

½ cup (125 ml) sliced onion

1/3 cup (80 ml) tomato sauce

1/3 cup (80 ml) crushed pineapple, drained

1 Tbsp (15 ml) VE Fruit Salsa Mix

1 — 12" (30 cm) whole-wheat prepared pizza shell

1 cup (250 ml) grated low-fat mozzarella cheese

  1. Preheat oven to 450° F (230° C).
  2. Toss chicken with VE Jamaican Jerk Seasoning.
  3. Heat oil in a VE Chef™ Eclipse® Coated Professional Frying Pan over medium-high heat. Sauté mushrooms and onions for 1 minute and set aside.
  4. Combine tomato sauce, pineapple and VE Fruit Salsa Mix in a small bowl. Spread on pizza shell. Top with chicken, mushrooms, onions and mozzarella.
  5. Bake for 12–14 minutes, or until crust is golden.
