Chicken Burgers with Mango and Blueberry Salsa

Bring back the warm tastes of summer with this tropical burger recipe – a heart-healthy choice all year round.

INGREDIENTS
Makes 4 servings

¾ lb (375 g) lean ground chicken

2 egg whites

3 Tbsp (45 ml) whole-wheat breadcrumbs

3 Tbsp (45 ml) VE 3 Onion Dip Mix

2 Tbsp (30 ml) VE Fruit Salsa Mix

½ cup (125 ml) cubed fresh mango

½ cup (125 ml) fresh blueberries

4 whole-wheat buns

4 lettuce leaves — any kind

  1. Combine chicken, egg whites, breadcrumbs and 2 Tbsp (30 ml) VE 3 Onion Dip Mix in a mixing bowl. Form into 4 patties.
  2. Cook burgers in a VE Chef™ Eclipse® Coated Professional Frying Pan over medium heat for approximately 10 minutes each side.
  3. Combine VE Fruit Salsa Mix, mango, blueberries and remaining VE 3 Onion Dip Mix in a small mixing bowl. Set aside.
  4. Place burgers on buns. Top with lettuce and prepared VE Salsa and serve.
