Chicken Fajitas

As most of the preparation work is done earlier in the week, this quick and easy dinner will be ready in minutes.

INGREDIENTS
Makes 4 servings

1 Tbsp (15 ml) olive oil

1 Tbsp (15 ml) lime juice

1 Tbsp (15 ml) VE Fajita Seasoning

2 — 6 oz (168 g) boneless, skinless chicken breasts

2 tsp (10 ml) vegetable oil

1 onion, cut in half, then sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 Tbsp (15 ml) VE Taco Seasoning

4 whole-grain tortillas, warmed

  1. Combine olive oil with lime juice and VE Fajita Seasoning. Add chicken, turning to coat.
  2. Preheat a VE Chef™ Eclipse® Coated Professional Frying Pan over medium-high heat. Cook chicken 4 minutes per side. Remove from pan and set aside.
  3. Add vegetable oil to hot pan. Add onion, peppers and VE Taco Seasoning and stir-fry for 3 minutes.
  4. Cut chicken into strips and return to pan with vegetables. Stir-fry for 2 minutes.
  5. Roll chicken and vegetables in tortillas.

Serving Suggestion Serve with prepared VE Guacamole Dip, VE Salsa and a vegetable platter with prepared VE Dip.
