Blackened Halibut

INGREDIENTS
Makes 4 servings

3 Tbsp (45 ml) VE Louisiana Hot & Spicy Dip Mix

2 tsp (10 ml) VE Seafood & Fish Seasoning

¼ tsp (1.25 ml) VE 4 Pepper Blend, ground

4 — 3 oz (84 g) halibut fillets

VE Chili Lime Sansel™, to taste

4 lemon wedges

  1. Place VE Louisiana Hot & Spicy Dip Mix, VE Seafood & Fish Seasoning and VE 4 Pepper Blend in a plastic bag. Add fillets one at a time and shake well to fully cover.
  2. Heat a large VE Chef™ Eclipse® Coated Professional Frying Pan to medium. Lightly spray with oil and carefully add fillets. Cook for 3–5 minutes per side, or until a dark crust forms on the outside and fish flakes easily with a fork.
  3. Season with VE Chili Lime Sansel™ and serve each with a lemon wedge.
