Buffalo-style Chicken Fingers

A sure-fire crowd-pleaser – cook on the grill or in the oven. Make extra for salad and sandwich toppers.

INGREDIENTS
Makes 4 servings

2 Tbsp (30 ml) VE Ranch Dressing Mix

1 ½ cups (375 ml) low-fat plain yogurt

Hot sauce, to taste

4 chicken breasts, cut into strips

1 ½ cups (375 ml) whole-grain breadcrumbs

  1. Preheat oven to 375° F (190° C).
  2. Combine VE Ranch Dressing Mix, yogurt and hot sauce in a medium mixing bowl.
  3. Dip chicken strips in mixture. Roll in breadcrumbs and place on a VE Parchment-lined baking sheet.
  4. Cook for approximately 20 minutes, or until golden brown and cooked through.
