Tex-Mex Dinner Burrito

A zesty twist on a southern favourite.

INGREDIENTS
Makes 2 servings

4 eggs

2 tsp (10 ml) VE 3 Onion Dip Mix

2 Tbsp (30 ml) water

¼ cup (60 ml) prepared VE Caliente Salsa

1 Tbsp (15 ml) VE Tex-Mex Grilling Sauce

1 tsp (5 ml) vegetable oil

2 — 6" (15 cm) corn tortillas

¼ cup (60 ml) grated low-fat cheese — any kind

  1. Whisk eggs with VE 3 Onion Dip Mix and water in a mixing bowl and set aside.
  2. Whisk VE Caliente Salsa with VE Tex-Mex Grilling Sauce in a separate mixing bowl. Set aside.
  3. Heat oil in a VE Chef™ Eclipse® Coated Professional Frying Pan over medium heat. Add egg mixture and cook, stirring with a VE Silicone Spatula, for approximately 2-3 minutes, or until just set.
  4. Microwave tortillas until warm and place on individual plates. Divide egg between each, top with salsa mixture and cheese. Fold and serve.
