Classic Potato Salad

This creamy, low-sodium potato salad has a ton of flavour!

INGREDIENTS
Makes 6 servings

½ cup (125 ml) low-fat mayonnaise

½ cup (125 ml) low-fat sour cream

Optional — 1 tsp (5 ml) VE Sweet & Spicy Mustard

2 tsp (10 ml) VE Lemon Dilly Dip Mix

VE Black Pepper, to taste

4 cups (1 L) cooked diced potatoes, peels on

2 Tbsp (30 ml) VE 3 Onion Dip Mix

3 hard-boiled eggs, sliced

  1. Whisk mayonnaise, sour cream, VE Sweet & Spicy Mustard, VE Lemon Dilly Dip Mix and VE Black Pepper in a large serving bowl.
  2. Add remaining ingredients. Toss to combine and serve.
