Salsa and Cheese Frittata

An easy, cheesy one-pan meal ready in minutes!

INGREDIENTS
Makes 4 servings

1 tsp (5 ml) VE Poco Picante Salsa Mix

6 eggs

¼ cup (60 ml) milk

½ cup (125 ml) prepared VE Poco Picante Salsa

½ cup (125 ml) grated low-fat cheese – any kind

  1. Preheat oven to broil. Whisk VE Poco Picante Salsa Mix with eggs and milk.
  2. Heat a VE Chef™ Eclipse® Coated Professional Frying Pan over medium heat. Lightly spray with vegetable oil and pour in egg mixture. Cook approximately 5-6 minutes, or until eggs are almost set. For even cooking, scrape around edges of pan with VE Heat-Resistant Silicone Spatula and let uncooked egg run to edges.
  3. Spoon prepared VE Poco Picante Salsa over eggs and sprinkle with cheese.
  4. Place pan under broiler and broil until cheese bubbles and eggs are fully set. Serve hot.

Serving Suggestion Serve with whole-grain toast and roasted tomato sprinkled with grated parmesan cheese.
