Baked Pineapple

INGREDIENTS
Makes 6 servings

1 – 19 oz (540 ml) can crushed pineapple, drained

1 cup (250 ml) sugar

2 Tbsp (30 ml) cornstarch

¼ cup (60 ml) water

2 eggs, beaten

1 Tbsp (15 ml) VE Vanilla Extract

1 Tbsp (15 ml) butter

1 tsp (5 ml) VE Cinnamon
  1. Preheat oven to 350° F (175° C). Lightly oil a 9 x 9” (23 x 23 cm) baking dish.
  2. Combine the first 6 ingredients in a mixing bowl and pour into prepared baking dish. Dot with butter and sprinkle with VE Cinnamon.
  3. Bake for 1 hour, or until bubbling and golden brown.

Creative Cooking For added tropical taste, replace 2 Tbsp (30 ml) sugar with 2 Tbsp (30 ml) VE Tropical Fruit Dip Mix.

Serving Suggestion Serve over low-fat vanilla ice cream or angel food cake.
