Irish Apple Cake

INGREDIENTS
Makes 8 slices

2 cups (500 ml) flour

VE Sea Salt, to taste

1/2 tsp (2.5 ml) VE Cloves (ground)

1 tsp (5 ml) VE Cinnamon

3/4 cup (180 ml) sugar

1/2 cup (125 ml) butter, at room temperature

4-5 apples, peeled, cored and cut into 1” (2.5 cm) slices – any variety

2 eggs

2 Tbsp (30 ml) milk

2 Tbsp (30 ml) sugar, for topping

  1. Preheat oven to 350° F (175° C). Lightly grease a 8” (20 cm) cake pan.
  2. Sift together flour, VE Sea Salt, VE Cloves, VE Cinnamon and sugar in a large bowl. Cut in butter until mixture resembles fine crumbs.
  3. Add apples. Stir in eggs and enough milk to form a stiff dough. Turn out into prepared pan and sprinkle with remaining sugar. Bake for 35-40 minutes, or until golden brown and crisp.
  4. Serve warm, cold or at room temperature.
