Epicure's Warm Potato Salad with Pesto
Serve as a side dish at your outdoor gathering.

Ingredients
- 2 lbs (1 kg) small thin skinned potatoes, scrubbed and cut in half
- 1 recipe prepared Epicure's Pesto
- 3 Tbsp (45 ml) white wine vinegar
- Epicure's Sea Salt, to taste
- Epicure's Black Pepper, to taste
- 1 Tbsp (15 ml) Epicure's Chives, or Parsley
Instructions
1. Steam or boil potatoes until tender crisp.
2. While potatoes are cooking, whisk together prepared Epicure's Pesto and white wine vinegar in mixing bowl.
3. Add drained potatoes, stirring gently to coat. Season to taste with Sea Salt and Black Pepper. Sprinkle with Chives or Parsley.
Potatoes are a great source of energy and fibre. Great served hot or cold.
