Epicure's Cranberry Orange Muffins
Make mini loaves and serve toasted slices for tea.

Ingredients
- 1 1/4 cups (310 ml) bran cereal
- 1 1/3 cups (330 ml) low-fat plain yogurt
- 1 egg
- 1 Tbsp (15 ml) orange zest
- 1/2 cup (125 ml) 100% orange juice
- 1/2 cup (125 ml) honey
- 1/4 cup (60 ml) vegetable oil
- 1 cup (250 ml) all purpose flour
- 1 cup (250 ml) whole-wheat flour
- 2 tsp (10 ml) Epicure's Baking Powder
- 1/2 tsp (2.5 ml) baking soda
- 1/2 tsp (2.5 ml) Epicure's Sea Salt
- 1 cup (250 ml) Epicure's Cherries & Berries, or fresh or frozen cranberries, halved
Instructions
1. Preheat oven to 375° F (190° C).
2. Lightly grease a 12-cup muffin pan or Epicure's Silicone Mini Loaf Pans.
3. Combine cereal and yogurt in a medium mixing bowl. Let stand 5 minutes.
4. Stir in egg, orange zest, orange juice, honey and oil.
5. In a large mixing bowl, mix remaining dry ingredients including berries. Batter will be lumpy.
6. Spoon into muffin or loaf pans.
7. Bake 25 minutes, or until set and golden. Cool on rack.
Each delicious muffin is an excellent source of fibre.
