Epicure’s Rustico Minestrone

Soup is the ideal solution for a little leftover Rustico or other favourite Epicure Pasta Sauce.

Cook Time: 10 minutes

Ingredients

  • 4 cups (1 L) prepared Epicure’s Chicken Bouillon Base
  • 2 cups (500 ml) prepared Epicure’s Rustico Sauce Mix
  • 8 cups (2 L) mixed frozen vegetables
  • 1-14 oz can cannellini beans
  • Grated Parmesan, to taste - optional
  • Olive oil, to taste - optional

Instructions

1. In Epicure’s Everything Pan, stir Chicken Bouillon with Rustico Sauce over medium-high heat. Bring to a boil, then stir in vegetables and beans.
2. Stir often, until vegetables and beans are warmed through, 4-6 minutes.
3. Ladle into bowls. Sprinkle with cheese and drizzle with oil.
